The original and unique product of the Islands of Japan definitely has its place of honour among incredibly various Asian cuisines. Only few people know that Sushi means literally "sour rice". Sushi is a traditional and classical Japanese meal, prepared mainly of raw sea fish, or of prawns, sepias, octopuses or various mussels. The specialty may be combined with many other ingredients, such as avocado, cucumber, spinach, radish, pumpkin, bamboo, mushrooms or eggs. Sushi is becoming popular all over the world thanks to its specific taste and its beneficial effects on the health of people, because its consumption ensures sufficient supply of fatty acids, iodine, proteins and minerals.
Sushi is grounded on the more than one thousand years old methods of fermentation, used by people living in southern Asia in the seventh century. Later Japanese cooks started to use similar procedure. They packed salted fish meat in rice to preserve it in such a manner. Originally, nobody ate the rice. In the course of time, however, they noticed that both foodstuffs in combination taste well and thus the meal that made Japan famous over the world was created.
During its long history, every part of Japan created its own local tasty Sushi specialties. Some recipes have maintained its form while others were modified to satisfy the modern civilization.
